Broccoli & Cheese Quiche

So, what do you do when you have an over abundance of broccoli? You make a Broccoli & Cheese Quiche! I must admit, I didn't have the highest of hopes for this one but it really came out delicious! And, it heats really, really well too!! Keep in mind, if you do not have broccoli, use whatever veggies you have on hand! It is the perfect way to get veggies in your meal & to use up halves or wholes of veggies you need to use up! For my Weight Watcher friends, this recipe comes out to 0 Points!

Serving 8


Ingredients:

3 Tumors Wraps (3pts)

8 Eggs

2 Tbsp Non Fat Greek Yogurt

28g Fat Free Chedder Cheese (0pts)

28g Fat Free Mozzarella Cheese (0pts)

40g Part Skim Mozzarella Cheese (3pts)

18g Low Fat Ricotta Cheese (0pts)

1 Cup Cooked Broccoli (0pts)



 

1. Cook and chill 1 Cup of Broccoli Florets.


2. Spray your pie plate. I used 1 Wrap for the bottom of my pie plate. The additional 2 wraps I cut in half and use as a crust for the sides of the pie plate.


3. Break 8 eggs in a bowl and mix.


4. Add 2 Tbsp Non Fat Greek Yogurt and mix.


5. Prepare your cheese . Add half the cheese into mixture and mix. Save the other half to add to the top. Add in your Ricotta Cheese.


6. Add your chilled broccoli to the mixture and mix.


7. Add egg mixture to pie dish. Add your additional cheese to the top.


8. I cut the top part of the crust off before baking. You can leave it if you want.


9. Cook at 375 for about 30 minutes - make sure the egg is cooked in the center! Do not over cook it as it will give it a different taste!
