For those who may be following the WW (Weight Watchers) Program, on Blue, these come out to 1 point for 1 square, 2 points for 2 squares (using the exact ingredients I have used.) On all other plans, please count the points according to ingredients as the only points below come from the flour (22pts)
Ingredients:
2 Cups All Purpose Flour
1/2 Cup Monkfruit Sugar (You can use whatever sugar you would like)
1 Cup Coco Powder
2 tbsp Baking Soda
1 tbsp Baking Powder
1/2 tspn Salt
1 tbsp Cinnamon
4 Eggs
1 1/2 Cup Applesauce
4 Cups Shredded Zucchini (3-4 zucchini)
1 tbsp Mini Chocolate Chips
1 tbsp Vanilla
1. Pre-heat your oven to 350 degrees.
In a bowl, mix all of your dry ingredients (flour, sugar, coco, baking soda/powder, salt, cinnamon). Keep to the side until ready to mix into wet ingredients.
2. In another bowl or mixer, mix your eggs and applesauce together.
3. Once they are fully incorporated, as mixer is still on, add your dry ingredients a little at a time.
4. Once the batter is fully mixed, you can stop the mixer and take the bowl out. Get a spatula and scrape down the sides to make sure all the dry and wet ingredients are fully mixed together.
5. Meanwhile, you can do this step ahead of time - Get 2-3 Fresh Zucchini's which you will be using to shred. I used my food processor but you can also use a box grater. I shredded 4 cups of zucchini. When I put the zucchini in, I did not add the additional water at the bottom of the bowl that resulted from the shredded zucchini.
6. Add your Shredded zucchini to your batter. Mix together. Add 1 tbsp of Vanilla & 1 tbsp of mini chocolate chips.
7. Grease your baking pan. Add your batter to pan.
8. I cooked mine for about 30 minutes on 350 degrees. Of course, keep an eye on yours as all of our ovens functions differently. You should be able to stick a toothpick in the center and it comes out clean - that's when its done! Allow the cake to cool down fully. I was able to get 24 Squares from my mix!
