I love Coconut Shrimp and haven't had it in a longgg time ... like way before my WW journey. I remember the last time I had it, there was some sort of mango dipping sauce and it was delicious! So, today I decided to create my own version! I had everything I needed on hand and it was the perfect Spring Day for it! I hope you Enjoy my recipe! Please remember that you will see points which is for my Weight Watchers friends!
Serving Size - 2 (4 Points Per Serving - Not Including Mango Salsa)
Ingredients:
1 Egg
8oz Shrimp (Peeled and deveined) - I used 10 Large Shrimp
24g All Purpose Flour (2pts) - I had leftover flour
23g Panko Bread Crumbs (2pts)
18g Sweetened Coconut Flakes (4pts)

1. Prepare your station for 3 different dipping stations - Flour, Egg, Coconut & Panko. I find it easy to use Parchment Paper for easy clean up!
2. Get your shrimp, dip it into your flour, then dip them into your egg, then your Coconut/Panko breading. I had extra Panko so I double dipped a few of my shrimp. It is easier to do each step for all the shrimp before going to the next station.
3. Place your plate with shrimp in the freezer while your air fryer pre-heats at 370 degrees for 5 minutes. This will allow for your breading to keep together and fry nicely.
4. Once your air fryer is heated, remove your shrimp from the freezer. Add them to your air fryer. I cooked mine at 400 degrees for 4 minutes and turned them and then cooked them at 375 for 4 more minutes. They came out perfect BUT please keep in mind, everyone's Air Fryer may work differently - so, keep an eye out for your shrimp. My Air Fryer is made by GoWise - highly recommend.
5. I served my Coconut Shrimp over Arugula with the Mango Avocado Salsa, Trader Joe's Peanut Vinaigrette (as dipping sauce), Cauliflower Fried Rice & Edamame.
Mango Avocado Salsa (Not Included In Points Above)
1. Cut up 1 Mango into chunks
2. Cilantro
3. Lemon & Lime Juice
4. Red Onion - thinly sliced
5. 1/2 tbsp Oil
6. 1 Avocado Cut into chunks
