Something so simple like Egg Salad doesn't have to be boring. I love making and sharing delicious food packed with flavor! Check out my version of an Egg Salad Sandwich!
Ingredients:
4 Hard Boiled Eggs
2 Slices Center Cut Bacon (2)
Sliced Tomato
Chopped Lettuce
4 Slices Rye Bread or bread of Choice (4pts per 2 slices)
2 tbsp light Mayo (3pts)
1 tbsp nonfat Greek Yogurt
Paprika
Everything But The Bagel Seasoning
Fresh Parsley
Serving: 2 Sandwiches - 7 Points Each
1. Boil & peel your eggs. You can also "hard boil" your eggs in your air fryer (put at 250 for 13-15 minutes). Chop your eggs up and put in a bowl.
2. Toast your bread. I had Rye bread on hand but for my WW friends, there are bread options for less point you can use.
3. Add 2 tbsp of light mayo & 1 tbsp of nonfat greek yogurt to your bowl.
4. Chop up your bacon. I like to cook my bacon a whole package at a time so I always have it ready on hand. Add bacon to the bowl.
5. Add a dash of Paparika & Everything But The Bagel Seasoning (you can use anything you choose).
6. Slice your tomato & lettuce - add to bread then add your egg salad on top and a touch more of the seasoning. Enjoy!
