Homemade Everything Bagels - Bacon, Egg & Cheese!

Since starting my healthy lifestyle & weight loss journey back in January 2019 I have not eaten a bagel! One of my favorite breakfasts was a Bacon, Egg & Cheese on an Everything Bagel - and being from NY -- we have access to the B E S T of the best when it comes to bagels. Well, I guess too many bagels was the 1st problem - haha! Anyway, I was making some Skinny Pizza Dough (not my recipe - just google it) and I have always seen everyone post about making bagels with it.... I thought to myself, ehh they are probable not that good anyway! Well, last night I decided I was going to make a batch of dough just for the bagels the next morning. OH MY .... Check out the results below! This was the B E S T bagel I have eaten like in forever! Keep in mind, you can choose any toppings or flavors you want for the bagels. My bagels came out to 4 points each and my dough made 5 bagels.
 

Ingredients:

2 Cups Self Rising Flour (22pts)

1/2 Cup Non Fat Greek Yogurt

1 tspn Yeast

1 tspn Salt

1/2 Cup Water - add more if needed

Flour - have extra for your surface

Everything But The Bagel Seasoning

Egg wash

Bacon, Egg & Cheese - If you choose to make the sandwich


 

1. In your mixer, add your flour, yeast & salt - mix together. Add your Greek Yogurt - mix. Then add your water in a little at a time. Keep mixing until dough forms into a ball.


2. Flour your surface and remove the dough from the mixing bowl. Kneed the dough. If the dough it too sticky, add flour until its easy to work with. If you are not using your dough right away, add it to a bowl and cover with a paper towel and refrigerate until your use. When you allow it to sit, it will rise double in size.


3. To make the bagels, remove dough to floured surface. Divide the dough into your desired amount of servings. I weigh my dough to make sure I have equal sizes and can accurately count the Weight Watchers points for each portion.


4. Roll out your selected portion into a log shape. Create a bagel shape and place on cookie sheet.


5. Brush the bagel with your egg wash and place your desired seasonings on top.


6. Oven temperature was set to 400 degrees. Place bagels in. Mine cooked in 17 -20 minutes - keep an eye out for yours. I just waited until they were golden brown.


7. While bagels are cooking I used a small pan to make each egg omelet. Once it was cooked I [put to the side with a slice of cheese and re-heated my cooked up bacon!
