Could you believe I never had Irish Soda Bread until I made it for the first time this year! Truth is, I wanted to make it because my mom loves it and I wanted to make it for her. A friend of mine, who is an amazing baker, gave me a recipe and when I really looked at it and tried to track the points for it (#WeightWatchers) it was a decision I made to NOT make the original recipe but instead create my own. I of course had to eat my own creation and I fell in love with Irish Soda Bread! It was beyond delicious! I am glad to share the recipe with you all.

Ingredients:
2 Cups All Purpose Flour (22pts)
1 tspn Baking Powder
1 tspn Baking Soda
2 tbsp Monk Fruit Sweetener
1/2 tspn Salt
1 Cup Light Buttermilk (5pts)
1 tbsp Caraway Seeds
35g Jumbo Raisins (Chopped) (6pts)
1 tbsp Unsalted Butter
Egg Wash
1. Pre-heat oven to 375 degrees. Use a sifter and put it over your mixing bowl. Add your flour, baking soda & baking powder to the sifter. Then add your monk fruit sweetener and salt and mix together.
2. Add buttermilk, carawayseeds, chopped raisins and butter to the dry mixture and combine.
3. Scrape the dough out on to a flour surface and kneed together. If mixture feels too sticky, add flour as your shape it for your baking pan.
4. Spray your baking pan and lightly flour it. Add your shaped dough into the pan.
5. Once your dough is in your pan, cut slits into the top. Add your egg wash to the top of of the bread.
6. Add your dough into the oven for about 30 minutes. Check for a golden brown top. Enjoy!
