Lemon Berry Cake With Fresh Berry Sauce .. .The BEST!

Just in time for S U M M E R! I was craving something with lemon and wanted to make a lemon cake. I started to write up some ideas and .... here we have this absolutely delicious Lemon Cake that I added Berries to and then made a fresh berry sauce!! I actually made this cake again 2 days later but didn't have strawberries and opted for Raspberries which were delicious and I added a little more lemon. When you read a recipe, always use it as inspiration in case you do not have all the ingredients, see how you can possibly change it up. For my Weight Watchers friends, the points are next to the products I used, but ALWAYS scan your own products for point accuracy!
 

Serving: 12 Pieces - 2 Points Each

Ingredients:

1 Cup Swerve Sugar

1 Cup Unsweetened Apple Sauce

2 Eggs

1 Cup Light Buttermilk (3pts)

1/2 tspn Vanilla

1/4 Cup Squeezed Lemon Juice

Zest of 1/2 Lemon

1/2 tspn Salt

2 Cups All Purpose Flour (24pts)

4 tspn Baking Powder

1-2 Cups of Berries (I used Strawberries & Blueberries)

1. Pre-heat oven to 375 Degrees. Line a pan with parchment paper.


2. Add Swerve & Apple Sauce to your mixing bowl & Mix Together.


3. In a separate bowl add buttermilk & eggs and whisk together then add your vanilla, lemon juice & lemon zest & salt - mix together.


4. Pour your buttermilk mixture into your mixing bowl and let those incorporate.


5. Add your flour & banking powder in the liquid batter. Mix well - make sure all of the flour is well incorporated.


6. Make sure you line your cake pan with parchment paper. Add your cake batter to your baking dish. Add your berries to the top and then swirl them around.


Bake for 30 Minutes * Please keep in mind - everyone's oven is different so use your best judgment on time for your cake.

To Make Berry Sauce:

Add Strawberries & 1/4 Cup of Water and 2 tbsp of Swerve Sugar to a sauce pan and cook down. Once it is cooked down add the blueberries and lemon zest ( also can add cinnamon.)
