Let's talk about the perfect Meatless e amazing! I think the use of the lemon really allowed the flavors to shine! For my WW Friends, there are so many options to make this meal lesser points: Use lower point pasta or even add zoodles with half portion of pasta. My thoughts were in line with the points for it as it was a complete meal and 11 points for 1 serving of this is SO. WORTH. IT!! Hope you enjoy!
Ingredients With WW Points Value:
1 tbsp Oil - 4pts
1 tbsp Cant Believe It's Not Butter - 1pt
2 Cloves Garlic
12 Shrimp
4oz Dry Pasta - 11pts
1 Bunch of Broccoli
1/2 Cup White Wine - 3pts (I used Pinot Grigio)
1 Lemon - Juiced & Zested
3 tbsp Pecorino Romano Cheese - 2pts

1. Fill a pot up with water and wait for it to boil so we can start the pasta. Make sure you salt your water! Once water boils, add your spaghetti. DO NOT BREAK the spaghetti. Use a proper utensil to push all the spaghetti in the water. Make sure you keep your eyes on it - constantly stirring it to make sure the spaghetti doesn't stick. Once your pasta is halfway cooked, add your broccoli florets to the same water to cook together.
2. In another pan, heat up 1 tspn of oil with half tbsp of butter. This will be used to saute the shrimp. The Shrimp will cook quick. Add them to your pan and add half of your garlic. You will only have to turn them once. Once they turn a light pink - they are done. Remove the Shrimp and put them aside.
3. The liquid that was left in the pan from the shrimp will be the start of your delicious sauce - do not discard. Add the rest of your butter, garlic and oil to the pan and let it saute together for about 2 minutes so the flavors incorporate. Add the wine & lemon to the pan and allow it to simmer. Add your fresh parsley (save a little for garnish) and 1/2 of your cheese.
4. Add your pasta and broccoli to the sauce while its still simmering and toss together. Then add your shrimp back in.
5. Plate up your pasta and shrimp. Add the remaining cheese & parsley! E N J O Y!
