šŸ“ Strawberry Scones šŸ˜

The perfect sweet treat or breakfast option that you can tailor to your tastes. I had some strawberries that I need to use up and what better way then ... S C O N E S! These scones cooked perfectly with chunks of fresh strawberries that hit my sweet tooth but didn't make me feel guilty! For my Weight Watchers Friends - 1 Scone for 2 points or 2 Scones for 3 points (WW Math šŸ¤£)

Serving 16 Scones

Ingredients:

2 Cups All Purpose Flour (22pts)

1/3 Cup Monk Fruit Sweetener (Sugar Substitute)

1/2 tspn Salt

2 tspn Baking Powder

1/2 tspn Baking Soda

1 Cup Light Buttermilk (5pts)

1/2 Cup Non Fat Greek Yogurt

1/2 tbsp I Can't Believe It's Not Butter Spray

1 Cup Chopped Fresh Strawberries

1 Egg (for egg wash)

1 tbsp Swerve Brown Sugar


1. Pre-heat oven to 375 degree. Mix all of your dry ingredients together (Flour, Sugar, Salt, Baking Powder & Baking Soda) in a mixing bowl.


2. Add your Buttermilk to your dry mixture and incorporate. The add your Butter Spray and Greek Yogurt and mix well. Add your chopped Strawberries and fold into mixture.


3. Add your mixture to a floured surface and kneed together (do not over mix your dough to ruin your strawberries).


4. Divide your dough into 2 even sections - Roll each dough piece into equal round disc. Cut each piece of dough into 8 equal wedges.


5. Place each wedge onto a parchment paper covered cookie sheet. Brush each wedge with the Egg wash and then sprinkle the Brown Sugar over each one.


6. Bake scones for 25 minutes or until golden brown. Enjoy!
