A delicious complete meal! This Turkey Bolognese would taste delicious on anything. I decided to pair it with a very light Baked Zucchini Rollatini and Spaghetti. All the way below, you will see the recipe for the Turkey Bolognese Sauce (which is also it's own post on here). Let's get to rollin' .... Weight Watchers Points: 2 Points for 2 Zucchini Rollatini & 6 Points for 2 oz of Spaghetti - total 8 Points!
Serving: 8 -- 2 Rollatini per Serving
Ingredients:
2 Zucchini
1/2 Cup Whole Ricotta Cheese (8)
1/2 Cup Low Fat Ricotta Cheese (3)
64g Part Skim Mozzarella Cheese (5)
3 tbsp Liquid Egg (or 1 whole egg)
3 tbsp Pecorino Romano Cheese (2)
Parsley
Black Pepper
2 oz Fat Free Shredded Mozzarella (Used for topping) (1)
1. Pre-heat oven to 375 degrees.
On a mandoline, slice up 2 Zucchini. Place Zucchini as a layer on paper towel. When all zucchini is sliced, place a heavy object on them to apply pressure. This technique is used so that the zucchini extracts the extra water in them.
2. Prepare your mixture: Ricotta Cheese, Mozzarella (excluded shredded mozzarella), Egg, 1 1/2 tbsp Pecorino Romano, Parsley & Pepper. Mix well together. ** Your will use the remaining 1 1/2 tbsp Pecorino Romano Cheese and Shredded Mozzarella to top the Zucchini. **
3. Let's Roll... In a baking dish, add some Bolognese Sauce to the bottom of the dish. Get 2 slices of Zucchini and add about 1 tbsp of mixture and roll. Put the Zucchini seam side down.
4. Put your dish in the oven. and let them cook for about 10-15 minutes. Once Zucchini looks tender, add sauce to the top. Sprinkle the mixture of Shredded Mozzarella & Pecorino Romano Cheese. Let cook for another 6-8 minutes.
5. I paired our dish with Spaghetti. Add fresh basil to the top! Enjoy!

Here is the recipe for the Turkey Bolognese Sauce:
Ingredients:
1 tbsp Oil
1 Onion - Chopped
1 Garlic - Chopped
5 Carrots - Chopped or Shredded
3 Celery Stalks - Chopped or Shredded
16 oz Ground Turkey Breast
2 Cans Tomato Sauce
1. In a saucepan, heat up 1 tbsp oil. Add chopped onions and garlic and saute until translucent - about 5 minutes,
2. You can either chop or shred your carrots & celery - I choose to shred them with my food processor. Add them to your saucepan. Saute together - stirring frequently.
3. Add your Turkey Chopped Meat in - stir and break up the pieces with your spoon. Let cook together for 5-10 minutes.
4. Add your tomato sauce, stir & cover.
5. Sauce should cook for about 45 minutes.
