So, last week I shared the ever so popular Strawberry Scone recipe (https://journeytowardshealth.wixsite.com/journeytowardshealth/post/strawberry-scones). Today, I had some extra Blueberries I need to use up so a new Scone recipe emerged! Everything basically stayed the same except: I added Blueberries, Chocolate Chips, Swerve Sugar (instead of Monk Fruit & I added Cinnamon & a dash of Vanilla. I also added some icing to the tops of these scones! For my Weight Watchers Friends - 1 Scone for 2 points or 2 Scones for 4 points.

Ingredients:
2 Cups All Purpose Flour (22pts)
1/3 Cup Swerve Granulated Sugar (Sugar Substitute)
1/2 tspn Salt
2 tspn Baking Powder
1/2 tspn Baking Soda
Dash Of Cinnamon
1 Cup Light Buttermilk (3pts)
1/2 Cup Non Fat Greek Yogurt
Dash Of Cinnamon
Splash Of Vanilla
1/2 tbsp I Can't Believe It's Not Butter Spray
1 Cup Chopped Fresh Strawberries
1 Cup Fresh Blueberries
18g Mini Chocolate Chips (4pts)
1 Egg or Liquid Egg (for egg wash)
1 tbsp Swerve Brown Sugar
Icing:
2 tbsp Swerve Confectioners Sugar plus 1 tbsp of water - mix together to the consistency you desire -- this was for about 4 scones.
1. Pre-heat oven to 375 degree. Mix all of your dry ingredients together (Flour, Sugar, Salt, Baking Powder & Baking Soda, Cinnamon) in a mixing bowl.
2. Add your Buttermilk, Greek Yogurt, Vanilla & Butter to your dry mixture and mix well.
3. Add your chopped Strawberries & Blueberries and fold into mixture.
4. Add your mixture to a floured surface and kneed together (do not over mix your dough to ruin your strawberries & blueberries). * Please keep in mind that the fresh Blueberries release juice which will make the batter sticky - please feel free to use extra flour to work the dough.
5. Divide your dough into 2 even sections - Work each dough piece into equal round disc. Cut each piece of dough into 8 equal wedges -. Keep in mind - in one section add your Chocolate Chips to the dough before cutting.
6. Place each wedge onto a parchment paper covered cookie sheet. Brush each wedge with the Egg wash and then sprinkle the Brown Sugar over each one.
7. Bake scones for 12-15 minutes or until golden brown. Enjoy!
